JESS’ GROUND LAMB SALAD

Commonly, we often talk about beef, chicken or pork every time we think of food to make. Well, let’s make this day amazingly different. Let’s opt to have lamb as our preferred meal for our family.

Did you know? Lamb is the healthiest among all meats. It is high in myoglobin content, (an iron-rich protein found in the muscle of animals), rich in protein, vitamins and essential minerals. No doubt, this recipe is healthy for your family.

 

 

 

Ingredients

 1 medium onion, minced

1 tbsp. low medium sodium chicken or vegetable broth

4 medium cloves garlic, pressed or finely chopped

1 medium tomato peeled, seeded and diced

¾ lbs. ground lamb

2 tbsp. chopped fresh mint

1 cup frozen peas

2 tbsp. chopped fresh basil

1 tbsp. chopped cilantro

1 tbsp. fresh lemon juice

1 head butter lettuce

Salt and pepper to taste

 

Directions

  1. Heat 1 TBS broth in a 10 inch stainless steel skillet and healthy saute onion for 2 minutes and add garlic and ground lamb. Break up lamb well so it is not in big lumps. Continue to sauté for another 5 minutes.
  2. Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
  3. Rinse and dry lettuce leaves discarding wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
